Hawaiian Cookies

These cookies taste as good as they look in the photos. They have a crispy edge and a chewy middle which makes them so delightfully tasty. Packed with oats and coconut, they have just the right amount of sweetness.

Did you know that both oats and coconut contain protein?

  • 1 cup of coconut contains 2.66 grams of protein.

  • 1 cup of oats contains approximately 10 grams of protein.

You can also add in some dried fruit to the batter such as cranberries or mangos. Happy baking!

Hawaiian Cookies

These fabulous cookies are made with coconut and oats which makes them chewy and delicious!

Ingredients

  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup butter - softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar - firmly packed
  • 1 egg
  • 1/2 tsp vanilla
  • 1 cup old fashioned oats
  • 1 cup shredded coconut - unsweetened

Instructions

  1. In a medium sized bowl, whisk the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  2. In a large mixing bowl, beat the butter, sugar, and brown sugar together until creamy. Add in egg and vanilla and continue to mix until well incorporated.
  3. Add flour mixture to butter/sugar mixture and mix only until blended. Add in oats and coconut and stir until incorporated.
  4. Chill in fridge for 30 to 45 minutes.
  5. Preheat oven to 350° F and prepare a cookie sheet with parchment paper or silicone mat.
  6. Use a cookie scoop and place cookies about 2" apart on prepared cookie sheet for approximately 15 minutes or until done.
  7. Cool on wire rack. Enjoy.
