Apple Cinnamon Walnut Cookies

I’ve been wanting to make these cookies for a while and add them to my blog. I love these cookies so much, they’re so tasty and have just the right amount of spice. The molasses and cinnamon go so well with the apples and walnuts.

Main Ingredients for this recipe:

Butter

I always use unsalted so I can control the amount of salt. If you only have salted butter, then use just a pinch of the salt called for in the recipe. Also, make sure to have your butter at room temperature.

Spices

  • Cinnamon

  • Nutmeg

  • Cloves

Molasses

Molasses gives the cookies moisture and a warm spicy flavor.

Oat Flour

The oat flour adds flavor and gives the cookies a chewier texture. If you don’t have oat flour, you can use old-fashioned oats. Grind the oats with your blender or food processor to make the oat flour.

Flour

I’ve said this many times, but I can tell the difference if I don’t use a quality brand flour like King Arthur. I find that it makes my baked goods taste so much better.

Apples

I usually use Granny Smith apples but there are many different apples that will work well for this recipe. Fuji, Honeycrisp, and Gala just to name a few.

Walnuts

I use the store brand or whatever is on sale.

Apple Cinnamon Walnut Cookies

These Apple Cinnamon Walnut Cookies are so delicious and full of spicey good flavor!

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup oat flour
  • 2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 cup butter - softened
  • 1/2 cup brown sugar - firmly packed
  • 1/4 cup granulated sugar
  • 1/8 cup molasses - not black strap
  • 2 eggs
  • 1 cup apple - finely chopped (I use Granny Smith)
  • 1 cup chopped walnuts
  • 1/2 cup cinnamon chips (optional)

Instructions

  1. In a medium sized bowl, whisk the flour, oat flour, cinnamon, baking powder, salt, nutmeg, and cloves. Set aside.
  2. In a large mixing bowl, combine the butter, brown sugar, and sugar together and beat until creamy.
  3. Add in the molasses and eggs (one at a time) and mix until thoroughly incorporated.
  4. Slowly add in the flour mixture to the sugar/molasses mixture and stir until just blended.
  5. Stir in the apples and nuts.
  6. Place bowl in fridge to chill for 1 hour.
  7. About 10 minutes before the hour is up, preheat oven to 350° F. and prepare a cookie sheet with parchment paper or silicone mat.
  8. Once the oven is heated to the correct temperature and the cookie dough has been chilled, drop by spoonful on prepared cookie sheet about 2" apart and bake for approximately 14 - 17 minutes or until done.
  9. Cool on wire rack.
