Old Time Fudge

This recipe is for old fashioned fudge and is made without marshmallow cream or sweetened condensed milk. Just made the old-fashioned way with milk (or cream), butter, and sugar. I didn’t have any walnuts when I made this recipe recently, so I left them out, but I know the walnuts make them extra good.

This light and creamy fudge is melt-in-your-mouth delicious!

Old Time Fudge

Rich, creamy, smooth, and melt-in-your-mouth delicious fudge!

Ingredients

  • 2 cups sugar
  • 3/4 cup whole milk or heavy cream
  • 6 Tbsp cocoa powder (sifted)
  • 2 Tbsp shortening
  • 1 tsp light corn syrup
  • 2 Tbsp butter
  • 1 tsp vanilla
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Prepare a 9 x 9-inch square pan with butter or parchment paper and set aside.
  2. Butter sides and bottom of a 2-quart saucepan and heat the sugar, milk, cocoa, shortening, and corn syrup over medium heat until it starts to bubble, then lower to medium low and stir continuously. Mixture should continue to bubble but not overflow.
  3. Use a candy or laser thermometer and cook until the temperature reaches 234° F.
  4. Remove from heat and add butter and vanilla. Stir vigorously with a wooden spoon or a spatula until thickened and shiny. Stir in nuts and immediately pour into the prepared pan and smooth with spatula.
  5. Store tightly covered at room temperature.
