Peanut Butter Honey Oat Bars

These peanut butter, honey, and oat bars are a great way to get your oats and protein. As you can see by the photo, my chocolate chips melted into the oats just a bit, but that just makes them taste even better.

This no-bake recipe is super easy and healthy. I keep these bars in my fridge for in-between meals when I want something quick that will also give me energy.

I recommend that you cut and fold your parchment paper to fit inside your pan. Here’s a lovely short video that shows exactly how to do that.

If you don’t want the sugar, you can leave off the chocolate chips. You can also use raisins instead of chocolate chips.

For a chewier texture, I recommend old-fashioned oats rather than quick oats.

Peanut Butter Honey Oat Bars

Ingredients

  • 4 Tbsp honey
  • 1 1/3 cup peanut butter (natural and unsweetened)
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 2 cups quick oats or old-fashioned oats
  • 1 cup semi sweet mini chocolate chips or raisins (Note for Vegans: Most semi-sweet chocolate and dark chocolate chips are vegan but it's good practice to check the ingredients to make sure.)

Instructions

  1. Place parchment paper in a 9" square pan - cut to fit.
  2. In a microwavable bowl, heat honey, peanut butter, salt, cinnamon, and vanilla extract for approximately 30 seconds (or until smooth and can be easily stirred).
  3. Stir in oats and chocolate chips and place mixture onto the parchment paper with a rubber spatula or with your clean hands. Push and spread mixture evenly into the pan.
  4. Refrigerate for 1 hour. Cut into squares and store in an airtight container in the fridge for up to 4 days.
