Apple Cinnamon Streusel Coffee Cake

I made this cake just yesterday morning and it was so good right out of the oven, but it’s still really good today. I love it when I make things that still have a good texture and flavor the next day, and this little coffee cake definitely does.

If you’re looking for a dessert to bring to a potluck or if you just want a nice little cake for your morning coffee, this is the recipe.

Now I may overdo it a bit with lots of streusel, but I really think you’ll love it.

When I say a couple of sprinkles of nutmeg, it’s really just a little bit. You don’t need a lot but don’t worry if you think you put too much or too little, it just adds a bit of extra spice to the flavor and if you don’t use it at all, it will still taste great.

I use Granny Smith apples for this recipe, but you can use whatever type apples you have on hand.

Apple Cinnamon Streusel Coffee Cake

Apples and cinnamon are one of my favorite recipe combinations. This little coffee cake is perfect for your morning coffee, potlucks, or any time really.

Ingredients

Apple Bread
  • 1 ½ cups all-purpose flour
  • ½ cup light or dark brown sugar
  • ¼ cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2 sprinkles of nutmeg (optional)
  • ¼ tsp salt
  • 1 large egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • ½ tsp pure vanilla extract
  • 1 to 1 1/2 apples - peeled and diced (Honey Crisp, Fuji, Granny Smith, or Gala are recommended)
Streusel
  • ¾ cup flour
  • ½ cup butter - cold and cut into small bits
  • 1/3 cup light or dark brown sugar
  • 2 tsp ground cinnamon
  • 2/3 cup nuts (optional)

Instructions

  1. Preheat oven to 350° F.
  2. Butter or use parchment paper in a 9” x 9” x 2” square pan.
  3. For the Apple Bread: In a large bowl, whisk together flour, sugars, baking powder, and salt. Set aside.
  4. In a smaller bowl, beat the egg and then add in milk, vegetable oil, and vanilla. Whisk until thoroughly combined.
  5. Add egg and milk mixture to flour mixture and mix only until you no longer see the white flour. Add in diced apple and stir until incorporated.
  6. For the Streusel: In a separate bowl, use a fork to mix the flour, butter, brown sugar, and cinnamon together. Mixture will be crumbly. Add in nuts (if using) and stir until well blended.
  7. Pour the Apple Bread mixture into the pan. Sprinkle the streusel mixture all over the Apple Bread mixture.
  8. Bake at 350° F for 30 – 35 minutes or until a toothpick comes out clean when inserted into the center.
